Sweet Lessons: the Art of Salted Caramels with Bre Kallenbach.

The best part of fall is the smells! My home is filled with the best smells during fall as we gather in the kitchen to whip up all our favorite fall treats!  My kiddos favorites are Salted Caramels!

Super simple and absolutely delicious! Will beat any store-bought brand out there!

For me one of the most important parts is knowing what is in my treats! As a Celiac it’s hard to find easy treats so I can make a batch and sneak a handful for my purse! So if you are looking for something celiac friendly these are a go to!

What you will need:

  • 2 cans of evaporated milk 12 fl oz each
  • 2 cups of light corn syrup
  • 2 sticks of unsalted butter
  • 4 cups of granulated white sugar
  • A pinch of salt
  • Coarse sea salt to flavor
  • Candy thermometer
  • Large pot
  • 9×13 inch pan or ( my favorite) two 6×6 pans
  • Parchment paper

These will take some time. So turn on some tunes and prep your station 😊

Start by lining your pan or pans of choice with parchment paper so the caramels don’t stick. Then opening up those shaken cans of evaporated milk to save time. Set aside.

Into the pot you will add the sugar, butter, corn syrup and the pinch of salt. Melt that up nicely and bring to a boil. Constantly stirring.

Now it’s time to stir in the evaporated milk very little at a time. Takes between 4 and five minutes per can. Continue to constantly keep stirring.  Do not skip this step and just pour it in fast, as this will cause curdling. This is the time to sway to the tunes you have on! Enjoy yourself!

After both cans of evaporated milk are added, it’s time to add the thermometer. Boil temperature needs to be at soft ball stage. Between 234-240 degrees. I’d say my perfect temp is 238 degrees. This may take a little bit as stove tops vary. Mine takes a little bit. It will reach temp. Keep a close eye on that thermometer.

At temperature take off the stove and immediately poor into pan of choice. Sprinkle the coarse sea salt on top as much or as little as you choose. Make sure to sprinkle the slat on while the candy is still hot of it will not stick well. Let sit and cool for a couple hours on the counter before you cut into.

I choose to wrap mine up in wax paper. Websites like amazon are great for fun and holiday printed wax sheets if you want to spruce it up a bit!
